DUE TO PROHIBITON MR. CARDINI THOUGHT IT WOULD BE BEST TO BE ABLE TO OFFER COCKTAILS AND WINE WHILE ENJOYING A GOOD MEAL AT HIS RESTAURANT IN TIJUANA. IN 1927 CARDINI MOVED HIS RESTAURANT TO ITS CURRENT LOCATION AND MADE A NAME FOR HIMSELF, AND BROUGHT INTERNATIONAL FAME TO MEXICO.  

ITS SAFE TO SAY THAT JAVIER PLASCENCIA, FAMOUS RESTAURANTEUR IN BAJA CALIFORNIA/SAN DIEGO, AND MR CARDINI SHARE A SIMILAR VISION, WHICH IS NOT ONLY TO REINVENT THE CITY OF TIJUANA BUT TO PUT BAJA ON THE GLOBE AS A CULINARY DESTINATION. THE PLASCENCIA FAMILY WANTED TO PRESERVE SOME OF TIJUANA'S HISTORY BY REOPENING THE DILAPIDATED CAESARS RESTAURANT IN 2010, RESTORING THE ORIGINAL BAR AND DECORATING THE WALLS PICTURES OF THE "OLD" TIJUANA. AND OF COURSE PRESERVING THE RECIPE OF THE ORIGINAL CAESAR SALAD PREPARED AND PLATED TABLE SIDE. 

MARIANO ESCOBEDO IS THE OWNER AND BREWER AT CERVECERIA KI'LI, A NANO BREWERY LOCATED IN THE OLD JAI ALAI BUILDING. KI'LI HAS BEEN BREWING FOR ABOUT FOUR YEARS NOW AND HAS BEEN FEATURED IN BEER ADVOCATE. AT THE MOMENT THEY HAVE A WEST COAST STYLE IPA, GERMAN STYLE HEFEWEIZEN AND IN IRISH RED ALE THAT WE WILL GET TO SAMPLE, HOWEVER THEY DO EXPERIMENT WITH OHTER STYLES SUCH AS BERLINER WEISSE, TURKISH COFFE STOUT TO NAME A FEW. KI'LI WOULD LIKE TO AT SOME POINT HAVE SEVEN BEERS IN PRODUCTION TO OFFER YEAR ROUND. KI'LI STAND FOR THE "KNOWLEDGE OF FLAVOR" IN THE MAYA LANGUAGE AND IT IS WHAT THEY STRIVE FOR EACH TIME THEY BREW.
