INSURGENTE AND TEOREMA BREWERY TOUR

CERVECERIA INSURGENTE IS RUN BY TWO BROTHERS, DAMIAN AND IVAN MORALES. THEY BOTH GREW UP IN TIJUANA AND WENT TO SHCOOL IN SAN DIEGO, ALWAYS BEING EXPOSED TO TWO VERY DIFFERENT LIFESTYLES FROM BOTH SIDES OF THE BORDER, VERY SIMILAR TO MY UPBRINGING. CRAFT BEER IS ONE OF  THE THINGS THAT HAS BEEN PRESENT THROUGHOUT OUR LIFE SPAN IN SAN DIEGO BUT NOT IN TIJUANA UP UNTIL FIVE YEARS AGO. INSURGENTE TOOK IT UPON THEMSELVES TO USE THE RESOURCES AVAILABLE FOR BREWING IN SAN DIEGO AND BE A PART OF THE MEXICAN CRAFT BEER REVOLUTION SOUTH OF THE BORDER. THEIR MISSION STATEMENT SAYS IT ALL, "BE AN INSURGENT AND FIGHT AGAINST THE TIRANY OF BEER WITHOUT FLAVOR AND CHARACTER." IT IS A GREAT HONOR TO PAY MY LONG TIME FRIENDS A VISIT AT THEIR NEWLY CONSTRUCTED BREWERY. WE WILL BE TASTING THEIR FOUR CORE BEERS: NOCTURNA, TINIEBLA, BROWN, LUPULOSA. 

 

IN 2009 EDGAR MARTINEZ OPENED THE BEER BOX IN TIJUANA, A TINY YET INFLUENTIAL AND QUAINT CRAFT BEER BAR, AT A TIME WHEN THE MARKET FOR CRAFT BEER WAS NON EXISTENT. THANKS TO EDGAR AND THE BEER BOX LOCALS HAVE A PLACE WHERE THEY CAN GO AND TRY MEXICAN CRAFT BEER WITH A ROTATING TAP LIST.  HAVING SPENT SOME TIME AT THE BEER BOX I HAVE HAD THE OPPORTUNITY TO CHAT WITH EDGAR ABOUT HIS NEW PROJECT. EDGAR AND HIS BUSINESS PARTNER LUIS DURAZO WERE RECENTLY FEATURED IN AN ARTICLE IN THE SAN DIEGO READER TALKING ABOUT THEIR BRAND NEW BREWERY LOCATED IN THE HEART OF DOWNTOWN TIJUANA.  TEOREMA IS THE NAME  OF THE BREWERY AND WILL BE PRODUCING THREE FLAGSHIP BEERS CONSISTING OF AN IPA, BELGIAN STYLE SAISON AND AMERICAN PORTER,  AS WELL AS EXPERIMENTING WITH SOURS, BELGIANS AND IPA'S. 

 

MARISCOS RUBEN IS A SONORA STYLE SEAFOOD TRUCK THAT HAS BEEN SERVING THE RESIDENTS OF TIJUANA FOR OVER TEWNTY YEARS NOW. IT COMES AS NO SURPRISE THAT THEY ARE STILL IN BUSINESS FOR THAT LONG BECAUSE ONCE YOU'VE TRIED SOME OF THEIR SMOKED MARLIN TAQUITOS WHICH ARE COOKED DIRECTLY ON MESQUITE YOU WILL UNDERSTAND WHY. THEY ALSO HAVE AMAZING AGUACHILE, SHRIMP COCKTAIL,  PISMO CLAMS AND CAMARON ENCHILADO TACO. THEY OFFER A VARIETY OF OVER TEN HOUSE MADE SALSAS THAT YOU CAN TRY ON EACH BITE OF YOUR MARISCOS. NOT TO MENTION THEY SERVE UP A DELICIOUS CONSOME, A SEAFOOD BROTH WITH CHUNKS OF MANTA RAY, WHICH HAS THE TEXTURE OF ALBACORE, AND VARIOUS HERBS AND SPICES.

 

EL COLEGIO BAJA MED IS A RESTAURANT THAT OPENED ITS KITCHEN IN 2013 AND IS RUN BY OWNER/CHEF MIGUEL ANGEL GUERRERO, WHO IS KNOW FOR CREATING BAJA MED CUISINE. BAJA MED GASTRONOMY INCORPORATES MEXICAN, MEDITERRANEAN AND ASIAN TRADITIONAL CUISINES THAT HAS BEEN RECOGNIZED AS THE SIGNATURE CUISINE OF BAJA CALIFORNIA. EL COLEGIO WAS CREATED TO HELP PORTRAY AN IMAGE OF DOWNTOWN  TIJUANA AS ONE THAT OFFERS A GOOD CULINARY EXPERIENCE, SINCE THE ZONA CENTRO AND AVENIDA REVOLUCION "LA REVU" IS RECOGNIZED WORLDWIDE. WITH AN OPEN KITCHEN, A WOOD FIRE GRILL AND CRAFT COCKTAILS, EL COLEGIO OFFERS A UNIQUE EXPERIENCE THAT IS UNFORGETTABLE.
