THE TELLEZ FAMILY ARE WELL KNOWN FOR THIER FINE DINING RESTAURANTS THROUGHOUT MEXICO. IN BAJA CALIFORNIA THEY OWN LAJA WHICH IS LOCATED IN THE VALLE DE GUADALUPE, OTHERWISE KNOWN AS THE "NAPA OF MEXICO." LAJA IS ONE OF THE FIRST FARM TO TABLE RESTAURANTS IN THE BAJA CALIFORNIA REGION AND IS CONSIDERED BY FOOD CRITICS TO BE THE "FRENCH LAUNDRY" OF MEXICO. THE OWNER AND EXECUTIVE CHEF AT LAJA JAIR TELLEZ CREATED THE MENU FOR MEROTORO IN MEXICO CITY AND  ONE OF MY FAVORITE RESTAURANTS, WHICH IS VERDE Y CREMA IN TIJUANA. MARTIN VARGAS IS THE MAN RUNNING THE KITCHEN AT VERDE Y CREMA WHO JUST SO HAPPENS  TO HAVE SPENT SOME TIME TRAINING UNDER THE INSTRUCTION OF JAIR. MARTIN IS ONE OF THE  BEST YOUNG CHEFS IN TIJUANA WHO IS  HELPING TRANSFORM THE CITY'S CULINARY SCENE.

 

THE TROCALONCHE IS A NEW PROJECT LED BY MARTIN VARGAS WHICH NORMALLY RESIDES AND OPERATES WITHIN THE PREMISES OF VERDE Y CREMA. TROCALONCHE IS AN UPSCALE FOOD TRUCK THAT NOT ONLY BELIEVES IN USING LOCAL AND SUSTAINABLE PRODUCTS, BUT HELPS EXPEDITE FOOD AT VERDE Y CREMA AND SERVES BREAKFAST DURING THE WEEK. TROCALONCHE PLANS TO BE SERVING THEIR FARE AT VARIOUS LOCATIONS THROUGHOUT TIJUANA VERY SOON. IN OUR OUTING WE WILL HAVE THE PRIVELEGE OF ORDERING FOOD FROM THE TROCALONCHE BEFORE THE TRUCK MAKES THEIR OFFICIAL LAUNCH.

WINE MAKER ANDRES BLANCO, WHO IS ALSO THE WINE SPECIALIST AT LAJA, WILL BE SPEAKING ABOUT THEIR WINE PROCESS AS WE ARE GUIDED THROUGH A TOUR OF THE PROPERTY RANCH. EACH GUEST WILL GET TO PARTICIPATE IN A TASTING OF FOUR OF THEIR WINES AND ENJOY A GLASS OF WINE WHILE DINING AL FRESCO AMIDST A BEAUTIFUL LANDSCAPE.
